HAPPY VALENTINE’S DAY!
Even though this is totally a commercial holiday, it’s always fun to receive a special gift. I like to make my loved ones special sweets to show them how much I truly love them.
Here Are Three Recipes That I Made To Celebrate Valentine’s Day:
Red Hot Velvet Cupcake With Cinnamon Buttercream
I’ve made these cupcakes several times since finding the recipe in O Magazine. They are absolutely moist and delicious. The frosting is not the traditional cream cheese one. But that makes these cupcakes even more special.
The recipe says that it makes 36 cupcakes, but I am only able to make 24.
From my experience, I always halve the Cinnamon Buttercream recipe, since it always make more than I need. Here is my modified frosting recipe:
Modified Cinnamon Buttercream Frosting Recipe
- 3/4 cups sugar
- 2 Tablespoons all-purpose flour
- 3/4 cups milk
- 2 Tablespoons heavy cream
- 1 1/2 sticks unsalted butter, soft but cool, cut into small pieces
- 1 tsp. pure vanilla extract
- 2 tsp. cinnamon
- Cinnamon imperials candies (optional)
- Red white-chocolate hearts (optional)
To make Cinnamon Buttercream Frosting
In a heavy-bottomed saucepan, whisk the sugar and flour together.
Add the milk and cream and cook over medium heat, whisking occasionally, until the mixture boils and has thickened, about 6 minutes. Remove immediately after thickening because the mixture will burn.
Transfer the mixture to the bowl of an electric mixer fitted with the paddle attachment. (OoMochaCheena Tip: Allow mixture to cool for about 7-10 minutes before proceeding to the next step. You want the mixture to be just warm enough to melt the butter. Any hotter will produce a running frosting that cannot be fixed no matter how long you leave it in the refrigerator!)
Beat on medium-high speed until cool, 5 minutes.
Reduce the speed to low and add the butter; beat until thoroughly incorporated. Increase speed to medium-high and beat until frosting is light and fluffy, 3 minutes.
Add the vanilla and cinnamon and continue mixing until combined.
If the frosting is too soft, transfer the bowl to the refrigerator to chill slightly, then beat again until it is the proper consistency. If the frosting is too firm, place the bowl over a pot of simmering water and beat with a wooden spoon until it is the proper consistency.

I love Starbucks Salted Caramel Hot Chocolate. These candies are an adaption of that. I found this recipe on The Chic Life. I decided to make them special by cutting them into heart shapes. They are very yummy with just the right amount of salt to highlight the caramel.
Heart-Shaped M&M’s Brown Sugar Blondies
M&M Brown Sugar Blondies
I saw these on Pinterest and I thought they looked Super Yummy. I actually had a bag of the M&M’s already so I figured I’d go for it.
This recipe is easy. Like less than 10 minutes of assembly easy. The only problem was that the M&M’s sank to the bottom as the Blondies baked. I would suggest that about 5 minutes before removing the pan from the oven to add the layer of M&M’s on top. Also, I prepared these in a disposable aluminum pan, making it easier to cut out the heart shapes.
